For me, the best pancakes to have are the traditional ones. Served warm, straight from the pan and sprinkled with caster sugar and plenty of fresh lemon juice – nothing beats it! but if your looking for a recipe that includes pineapples then this recipe is for you. These are delectable, special occasion pancakes that will wow your friends.

Pineapple Upside-Down Pancakes are a delicious twist on the classic breakfast dish. Here’s how to make them:

Ingredients:

  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1 tbsp sugar
  • 1 egg
  • 1 cup milk
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
  • 1 can pineapple slices (drained)
  • Maraschino cherries (optional)
  • Brown sugar

Instructions:

  1. In a medium-sized mixing bowl, combine the flour, baking powder, salt, and sugar. Mix well.
  2. In a separate mixing bowl, whisk together the egg, milk, melted butter, and vanilla extract until smooth.
  3. Add the wet ingredients to the dry ingredients and mix until just combined. Be careful not to overmix the batter.
  4. Heat a non-stick skillet or griddle over medium heat. Sprinkle a small amount of brown sugar onto the surface of the skillet.
  5. Place a pineapple slice onto the brown sugar and top with a Maraschino cherry (if using).
  6. Pour a small amount of the pancake batter over the pineapple slice, making sure to cover it completely.
  7. Cook the pancake until bubbles form on the surface and the edges begin to set. Flip the pancake over and cook for an additional 1-2 minutes until cooked through.
  8. Repeat the process with the remaining pineapple slices and pancake batter.
  9. Serve the pancakes warm with a drizzle of maple syrup or honey.
