Ingredients:

  • 4 red or yellow bell peppers, halved and cleaned out
  • 1 pound lean ground turkey
  • 1/2 onion, diced
  • 1 clove garlic, minced
  • 1 shallot, minced
  • 1/4 cup whole wheat breadcrumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh parsley, chopped

Instructions:

  1. Preheat your grill to medium-high heat. While the grill is heating up, prepare the bell peppers by rinsing them and slicing them in half. Remove the seeds and any veins from the insides of the peppers and set them aside.
  2. In a medium-sized mixing bowl, combine the lean ground turkey, diced onion, minced garlic, minced shallot, whole wheat breadcrumbs, salt, black pepper, Dijon mustard, and chopped fresh parsley. Use your hands or a spoon to mix the ingredients together until well combined.
  3. Once the turkey mixture is ready, carefully stuff each bell pepper half with the mixture, distributing it evenly among the peppers.
  4. Lightly grease the grill grates to prevent sticking. Place each filled pepper half meat-side down on the preheated grill. Grill for approximately 5 minutes, allowing the bottoms to cook and develop grill marks.
  5. After 5 minutes, carefully flip over each pepper using tongs or a spatula. Continue grilling for an additional 5-8 minutes, or until the internal temperature of the turkey reaches 165 degrees Fahrenheit. The peppers should be tender and slightly charred on the outside.
  6. Once cooked through, remove the stuffed peppers from the grill and transfer them to a serving platter. Allow them to cool for a few minutes before serving.
  7. Serve your Grilled Turkey Stuffed Bell Peppers hot, garnished with additional chopped parsley if desired. These peppers pair well with a side salad, quinoa, or brown rice for a complete and nutritious meal.
